
Like a warm apple crisp, but it takes only ten minutes to prepare, making this recipe an easy pre-bed treat. Warm apples provide carbohydrates and Greek yogurt adds protein to stimulate tryptophan while walnuts contain sleep-inducing melatonin. In the summertime, feel free to substitute peaches, blueberries, or cherries to enjoy the flavors of the season.
Makes 1 serving
- 1 ounce walnuts
- 1 medium apple, sliced
- 1/2 teaspoon cinnamon
- Pinch of salt
- 2-3 tablespoons water
- 1 teaspoon maple syrup
- 2 tablespoons plain Greek yogurt
Heat a skillet over medium-high heat. Toast walnuts, stirring continuously, until fragrant, about 2-3 minutes. Remove from heat and set aside.
Place apples in the pan, sprinkle with cinnamon and salt, and toss to combine. Add water to cover the bottom of the skillet. Bring to a simmer over medium high heat, then lower the heat and cook until apples are soft and mixture thickens.
In a small bowl, stir together maple syrup and yogurt until well combined. Transfer apples to a serving dish, top with maple-yogurt, toasted walnuts, and drizzle with any liquid from the pan.
