Garden Salsa Tacos

An easy, no-cook recipe featuring a garden of vegetables that can be customized for however you like them. 

Makes 4 servings 

Garden Salsa 

  • 2 cups tomatoes, chopped  
  • 1 cup bell peppers, chopped (the more color the better – consider using red, orange and green!)  
  • 1/2 cup onions, chopped  
  • 1 handful of cilantro  
  • 2 limes, juiced  
  • Salt, to taste  

Tacos 

  • Tortillas   
  • Black beans  
  • Shredded cheese  
  • Leafy greens (arugula, shredded lettuce, etc.)  
  • Rainbow carrots (shredded or ribboned)  
  • Corn  
  • Avocado  
  • Other topping ideas: jicama, purple cabbage, pea shoots, etc.  

In a large mixing bowl, combine tomatoes, bell peppers, and onions. Add cilantro and the juice of 2 limes into the bowl. Add 1-2 pinches of salt to taste and mix until combined.  

Assemble taco with your choice of toppings on the tortilla, top with garden salsa, and enjoy!
